Build-Your-Own Breakfast Burritos



Here's a fun spin on breakfast! Take some scrambled eggs and load them up with your choice of ham or sausage, green peppers, onions, and cheese....then fold them all inside a warm tortilla. An obvious breakfast feast, but also good for a light dinner. They will be packaged in a plastic bag. - Gluten Free with substitutions.

Build-Your-Own Breakfast Burritos

Thaw in the refrigerator for 2 to 3 days or until completely thawed. Warm the tortillas, in foil, in a 350 degree oven for 10 minutes. Meanwhile, place the contents of the ham package in a large skillet. Cook and stir over a medium heat until heated through. Remove from the skillet. In the same skillet, pour in the egg mixture. Cook over a medium heat, without stirring, until the mixture begins to set on the bottom and around the edge. Using a spatula, lift and fold the partially cooked eggs so the uncooked portion flows underneath. Continue cooking for 2 to 3 minutes or until the eggs are cooked through but still glossy and moist. Carefully fold the ham mixture back in to the egg mixture. Spoon some of the egg mixture onto each tortilla just below the center. Sprinkle with 1/3 cup cheese. Fold up the bottom edge of the tortilla up and over the filling. While holding the bottom of the tortilla over the filling, fold in the sides until they touch. With the sides in place, roll up to encase the filling.
