Italian Lemon Roasted Chicken
This is a whole chicken that you will marinade, take home, and roast in your oven. Think of a rotisserie chicken from the grocery store, all dressed up with olive oil herbs, seasonings, and a lemon. It will be packaged in a plastic bag. We apologize, but this item cannot be split.
Thaw in the refrigerator for 2 to 3 days or until completely thawed. Cut the lemon in half crosswise. Remove the chicken from the bag and place it, breast side up, on a shallow roasting pan. Squeeze the lemon over the chicken. Place the squeezed lemon halves in the body cavity of the chicken. Season the chicken with salt and pepper. Roast the chicken, uncovered, at 375 degrees for 2 hours until it is 165 degrees using your meat thermometer. Cover is loosely with foil and let it stand for 10 minutes before carving.
